Recipe for Maison Mumbai Coconut Chicken from the sets of The Hundred-Foot Journey!

THE HUNDRED-FOOT JOURNEY

Maison Mumbai Coconut Chicken

Serves 6-8
Total time (prep & cook) approx. 1 hour

Ingredients:
4-5 boneless, skinless chicken breasts (approx. 1½ – 2 lbs.), cubed
1 c. red onions, chopped coursely
1 medium yellow onion, sliced thin
1 t. garlic paste (optional)
1 t. ginger
½ c. cashews
fresh red chiles
salt
tomato paste
kari leaves
garam masala (whole seed)
chopped meat of one coconut + milk (or ½ c. shredded coconut + 1 can coconut milk)
1 lime, halved
6 T. ghee
1 t. turmeric
1 bay leaf
2 t. madras masala*

Directions:

In a small saucepan, cook the yellow onion in half the ghee over low heat until translucent. Meanwhile, in a large, deep skillet, roast cashews, red chiles and kari leaves in the remaining ghee over medium heat until cashews are roasted and slightly red, about 1-2 minutes. Remove the cashews from the ghee and set aside. Using the same pan and now aromatic ghee, add the garam masala (whole seeds), bay leaf, red onions, garlic paste and ginger. Cook, stirring, 1 minute over medium-low heat.
Add turmeric, more red chiles (optional), madras masala, coconut meat and half the coconut milk. Add ⅓ to ½ c. warm water, as needed, to achieve desired consistency.

Add tomato paste and salt, to taste. Add chicken and squeeze the juice of both lime halves over the dish, dropping the rind into the mixture. Add more coconut milk, to taste, and cook, covered, for 3 minutes over medium-high heat.

Turn heat to medium-low and cook an additional 7 minutes.

Top with roasted cashews and yellow onions. Serve hot with rice or lentils or vegetable masala and papadams.

*Madras Masala – Using whole kernels (to taste) of fennel seed, cinnamon, coriander, cumin, black peppercorns, star anise, ajwain (carom) seed and green cardamom, grind together in one
